Making sabich in Israel

Click on the film to watch Chef Moti David of Adom in Jerusalem create his contemporary version of sabich, a traditional Sabbath morning dish of Iraqi Jews that has become a street-food staple in Israel.

Ordinarily a sabich pita sandwich is stuffed with roasted eggplant, tahini, parsley, mango chutney and a hard-boiled egg.

David takes away the pita, poaches the egg and plates the concoction elegantly on a bed of chickpeas. Bete’avon (bon appetit)!
